Saffron mushroom simple risotto recipe

The other day I realized that we have never made a risotto, one of the simple rice recipes that the whole family likes so, I have got to work to teach you how to prepare a simple saffron mushroom risotto With which you can succeed this weekend.

Risotto recipes should be prepared with a special rice for that purpose that you will find without difficulty on large surfaces. Its about Carnaroli rice or arborio, but if you don't find it, you can make the recipe with rice bomb and you will be almost as rich.

Ingredients for 4 people

  • 300 g of carnaroli rice, 16 boletus mushrooms, shiitake or meaty mushrooms, 1 scallion, 20 strands of saffron, water or vegetable stock

How to make a simple saffron mushroom risotto

To make the risotto, we put 500 ml of water or vegetable broth in a jar and add the saffron. We boil, turn off and let infuse for a few minutes then use that liquid to hydrate our risotto.

Meanwhile, we chop the scallions and mushrooms into bite-sized pieces and sauté everything for about 3 minutes. Add the rice and mix it with the mushrooms and the scallion, stirring until transparent. If you want you can optionally add a splash of white wine or vermouth letting all the alcohol evaporate, although it is not necessary, especially if children are going to eat it too.

From now on, the secret is to go adding the broth with saffron little by little, stirring continuously, until the rice has absorbed the liquid. Then we repeat the operation, always adding the broth little by little and so on until the broth is finished or until the rice is at its point, something "al dente" inside and very sweet and sticky on the outside.

We row by adding some parmesan cheese flakes above and we take to the table where each diner will remove the cheese (which will melt easily with the heat) by melting it with the rest of the ingredients and giving the risotto its traditional mellow appearance.
